For the Cake:
- 1 box white or yellow cake mix
- 1 (3 oz) box strawberry-flavored gelatin
- 1 cup fresh strawberries, finely chopped (or frozen, thawed & drained)
- ½ cup vegetable oil
- ½ cup milk
- 4 large eggs
- 1 tsp vanilla extract
For the Strawberry Frosting:
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- ¼ cup pureed strawberries (fresh or frozen)
- 1 tsp vanilla extract
- Pinch of salt
- Make the Cake – Preheat oven to 350°F (175°C). Grease and flour a bundt pan. In a large bowl, combine cake mix, strawberry gelatin, oil, milk, eggs, vanilla, and chopped strawberries. Mix until smooth and well combined. Pour batter into prepared bundt pan. Bake 40–45 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then carefully invert onto a wire rack to cool completely.
- Make the Frosting – Beat butter until creamy. Add powdered sugar gradually, alternating with strawberry puree. Mix in vanilla and a pinch of salt until smooth and spreadable. Adjust with extra powdered sugar if too thin, or extra puree if too thick.
- Frost the Cake – Once cake is fully cooled, generously spread strawberry frosting over it. Optionally, decorate with fresh strawberries on top.
