Tortillas:

  • 2 large flour tortillas

Cheese:

  • 1 cup sharp cheddar cheese, shredded

Kimchi Mixture:

  • Β½ cup kimchi, chopped and drained
  • Β½ cup cooked ground beef or pork (optional, for extra protein)
  • 1 tbsp gochujang (Korean chili paste, optional for heat)

For Cooking:

  • 1 tbsp butter or oil

For Serving:

  • Sour cream, guacamole, or salsa (for dipping)

Instructions

  1. Prepare the Filling: In a small skillet, sautΓ© chopped kimchi for 2–3 minutes to intensify flavor. If using ground meat, stir it in along with gochujang.
  2. Assemble the Quesadilla: Place one tortilla on a heated skillet, sprinkle with half of the cheddar, add the kimchi mixture, then top with the remaining cheese. Place the second tortilla on top.
  3. Cook Until Golden: Cook over medium heat with butter or oil until golden brown on one side (3–4 minutes). Flip carefully and cook the other side until the cheese is melted and bubbly.
  4. Slice & Serve: Cut into wedges and serve hot with sour cream, guacamole, or spicy salsa.
