Gingerbread Sponge Cake

  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 4 eggs
  • 1/4 cup brown sugar
  • 1/2 cup molasses
  • 2 teaspoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Spiced Rum Cream Cheese Frosting

  • 1 tablespoon spiced rum
  • 8 ounces cream cheese, room temperature
  • 3 cups powdered sugar
  • 23 tablespoons heavy cream

Instructions

  1. Gingerbread Sponge Cake Preheat the oven, prepare the pan, mix dry ingredients, beat eggs and sugar, add molasses, butter, and vanilla, incorporate flour mixture, bake, roll and cool.
  2. Spiced Rum Cream Cheese Frosting Beat rum and cream cheese, add powdered sugar, mix in heavy cream, spread over cake, roll, transfer to plate, cover with remaining frosting, decorate.

Notes

  • Rum extract can be used instead of spiced rum in the frosting.
  • Leave excess parchment paper on the ends for easier rolling.
