Fruit Mix:

  • 2 cups mixed fresh fruit (strawberries, grapes, peaches, kiwis, etc.), chopped

Lime Cream:

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1/2 cup freshly squeezed lime juice
  • 1 package cream cheese (8 oz), softened
  • 1 tsp vanilla extract

Assembly:

  • 1 pack galletas María (or digestive biscuits)
  • Optional garnish: extra fresh fruit and mint leaves

Instructions

  1. Lime Cream: In a blender, combine sweetened condensed milk, evaporated milk, cream cheese, lime juice, and vanilla extract. Blend until smooth and creamy.
  2. Assembly: In a springform pan or glass dish, spread a thin layer of the lime cream mixture. Add a layer of galletas María to cover the base. Spoon more cream over the cookies, then scatter an even layer of chopped fruit. Repeat the layers: cookies, cream, and fruit, until the pan is full, finishing with cream and arranged fruit on top. Cover and refrigerate for at least 4–6 hours or overnight until set and chilled. Carefully unmold if using a springform pan. Slice and serve cold.
