For the Crockpot Beef:

  • 3 lbs beef chuck roast (or brisket)
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • ½ cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste

For Serving:

  • 6 slices cooked bacon
  • 6 sandwich buns (toasted)
  • Optional toppings: cheddar cheese, fried onions, pickles

Instructions

  1. Prep the beef: Season roast generously with salt, pepper, chili powder, and smoked paprika.
  2. Layer in crockpot: Place onions, peppers, and garlic in the bottom. Add beef on top.
  3. Add sauces: Pour in barbecue sauce, beef broth, and Worcestershire.
  4. Cook low & slow: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until beef is tender and shreddable.
  5. Shred beef: Remove roast, shred with two forks, then return to the crockpot and stir into the juices and veggies.
  6. Assemble sandwiches: Pile beef mixture onto toasted buns. Top with crispy bacon and optional cheese or fried onions.
