For the Crockpot Beef:
- 3 lbs beef chuck roast (or brisket)
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup barbecue sauce
- ½ cup beef broth
- 2 tbsp Worcestershire sauce
- 1 tbsp chili powder
- 1 tsp smoked paprika
- Salt & pepper to taste
For Serving:
- 6 slices cooked bacon
- 6 sandwich buns (toasted)

- Prep the beef: Season roast generously with salt, pepper, chili powder, and smoked paprika.
- Layer in crockpot: Place onions, peppers, and garlic in the bottom. Add beef on top.

- Cook low & slow: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until beef is tender and shreddable.
