For the Cookies:

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (115g) powdered sugar
  • 1 cup (240ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon almond extract
  • 4 1/2 cups (565g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 3/4 cup chopped maraschino cherries, patted dry

For the Frosting:

  • 1/2 cup (113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 23 tablespoons maraschino cherry juice
  • 1/2 teaspoon almond extract
  • Sliced almonds, for topping
  • Optional: pink food coloring

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat butter, granulated sugar, powdered sugar, and oil until light and fluffy.
  3. Add in eggs and almond extract, mixing until combined.
  4. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt.
  5. Gradually add dry ingredients to wet, mixing until just combined.
  6. Gently fold in the chopped cherries.
  7. Drop dough by rounded tablespoons onto baking sheets. Do not flatten.
  8. Bake for 10–12 minutes, until just set (they should remain pale). Cool completely.
  9. For the frosting, beat butter, powdered sugar, almond extract, and cherry juice until smooth and fluffy. Add pink food coloring if desired.
  10. Spread frosting over cooled cookies and top with sliced almonds.

Notes

  • Don’t overbake! These cookies should be soft and cakey.
  • Pat cherries dry thoroughly to avoid excess moisture.
  • Frost only once cookies are fully cooled to prevent melting.
