Filet Mignon:

  • 2 filet mignon steaks (about 68 oz each)
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Garlic Butter:

  • 3 tbsp unsalted butter
  • 4 garlic cloves, smashed
  • 2 sprigs fresh rosemary (or thyme)

For serving (optional sides):

  • Steamed or roasted asparagus
  • Baked potato with sour cream and chives
  • Au jus or red wine reduction

Instructions

  1. Prepare Steaks: Pat filets dry with paper towels. Season generously with salt and pepper.
  2. Sear Steaks: Heat olive oil in a cast iron skillet over medium-high heat until shimmering. Add steaks and sear 2–3 minutes per side until a golden crust forms.
  3. Baste with Butter: Reduce heat to medium. Add butter, garlic cloves, and rosemary to the pan. Tilt skillet slightly and spoon melted butter over steaks for 1–2 minutes.
  4. Check Doneness: For medium-rare: cook to an internal temp of 130°F (54°C). For medium: 140°F (60°C).
  5. Rest & Serve: Transfer steaks to a plate, cover lightly with foil, and rest for 5 minutes before slicing. Serve with asparagus, baked potato, and au jus.
