  • 1 tbsp olive oil
  • 1 lb (450g) boneless skinless chicken breasts, cubed
  • 8 oz (225g) smoked sausage (like andouille), sliced
  • 1 small onion, diced
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 12 jalapeños, sliced (optional)
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt & pepper to taste
  • 1 can (15 oz) white beans, drained & rinsed
  • 3 cups chicken broth
  • ½ cup heavy cream or half & half
  • ½ cup shredded Monterey Jack or white cheddar (optional for creaminess)
  • Juice of ½ lime (optional for brightness)

For Garnish:

  • Chopped fresh parsley or cilantro

Instructions

  1. Sauté Aromatics: In a large pot over medium heat, heat olive oil. Add sausage slices and cook until browned. Remove and set aside.
  2. Cook Chicken: In the same pot, add chicken, onion, bell pepper, garlic, and jalapeños. Cook until chicken is lightly golden.
  3. Add Spices: Stir in Cajun seasoning, paprika, cumin, salt, and pepper. Cook for 1 minute.
  4. Simmer: Add white beans, sausage, and chicken broth. Bring to a simmer and cook for 15–20 minutes, uncovered.
  5. Finish Creamy Base: Lower heat, stir in cream and cheese. Let it melt in. Add lime juice if using.
  6. Serve: Garnish with fresh herbs and more sliced jalapeños if desired.

Notes

  • Use rotisserie chicken for a faster version.
  • For extra heat, add a dash of cayenne or hot sauce.
  • Can be thickened with a cornstarch slurry if needed.
