For the Oreo crust:

  • 24 Oreo cookies
  • 1/4 cup unsalted butter, melted

For the peanut butter cheesecake filling:

  • 24 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs

For the ganache topping:

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

For garnish:

  • 1/2 cup chopped mini peanut butter cups
  • 1/4 cup Reese’s Pieces or similar candy

Instructions

  1. Preheat oven to 325°F (160°C). Pulse Oreos into fine crumbs and mix with melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes and cool.
  2. In a large bowl, beat cream cheese until smooth. Add peanut butter and sugar, mixing well.
  3. Add sour cream and vanilla, then mix in eggs one at a time until just combined.
  4. Pour batter over cooled crust and smooth the top.
  5. Bake for 50–55 minutes until the center is just set. Cool completely, then chill at least 4 hours or overnight.
  6. For the ganache, heat heavy cream until just simmering. Pour over chocolate chips and let sit 2 minutes, then stir until smooth.
  7. Pour ganache over chilled cheesecake and spread evenly. Top with chopped peanut butter cups and candies.
  8. Chill for 15 minutes before slicing and serving.
