For the Shortbread Base:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil, melted
  • 1/2 tsp vanilla extract
  • Pinch of salt

For the Matcha Caramel:

  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 tbsp coconut oil
  • 1 tsp ceremonial grade matcha powder
  • 1/2 tsp vanilla extract
  • Pinch of salt

For the Coating:

  • 1 1/4 cups vegan white chocolate chips
  • 1 tsp coconut oil
  • 1 tsp matcha powder (for drizzle, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a small loaf or square pan with parchment paper.
  2. Mix all shortbread ingredients until a dough forms. Press evenly into the pan. Bake for 10–12 minutes until lightly golden. Cool completely.
  3. Combine all matcha caramel ingredients in a small bowl and stir until smooth.
  4. Spread the caramel over the cooled base and freeze for 30–45 minutes, or until firm.
  5. Cut into bars once firm.
  6. Melt white chocolate and coconut oil. Dip each bar into the melted chocolate to coat. Place on a tray lined with parchment.
  7. Optional: Mix matcha with melted white chocolate and drizzle on top of each bar for decoration.
  8. Chill bars until set. Store in fridge for a firm texture or room temperature for a softer bite.
