For the Lava Cake Batter:

  • 1/2 cup unsalted butter
  • 4 oz white chocolate (or dark chocolate for variation)
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 egg yolks
  • 1/2 tsp vanilla extract
  • 1/4 cup mashed banana
  • 1/3 cup all-purpose flour
  • Pinch of salt

For Garnish:

  • Extra sliced bananas
  • Caramel sauce
  • Extra chopped nuts

Instructions

  1. Prepare Ramekins: Grease ramekins with butter. Layer bananas, pecans, brown sugar, and melted butter in each ramekin.
  2. Make the Batter: Melt butter and chocolate, then cool. Whisk eggs, sugar, banana, and vanilla. Fold in chocolate, then flour and salt.
  3. Assemble and Bake: Pour batter over banana-pecan base. Bake at 425°F for 12–14 minutes. Invert onto plates.
