  • 1 cup fresh or frozen blueberries
  • ⅓ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Blackberry Filling:

  • 1 cup fresh or frozen blackberries
  • ⅓ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a medium saucepan, combine berries, sugar, and lemon juice over medium heat. Stir occasionally and cook until the berries release their juices and the mixture begins to bubble.
  2. In a small bowl, mix cornstarch and water to create a slurry, then stir it into the berry mixture. Simmer for 2–3 more minutes until thickened.
  3. Remove from heat and cool completely before using in cakes.
  4. Store in an airtight container in the refrigerator for up to 1 week.
