For the cake:

  • ½ cup almond flour
  • 2 tbsp all-purpose flour
  • ½ cup granulated sugar
  • 4 large egg whites
  • ½ cup unsalted butter
  • ⅓ cup toasted sliced almonds (reserve some for topping)
  • 1 tsp vanilla extract (or ½ tsp almond extract)
  • ¼ tsp salt

Instructions

  1. Preheat the oven and prepare the molds: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin or financier molds.
  2. Brown the butter: Melt the butter in a saucepan over medium heat until golden brown and fragrant. Remove from heat and let it cool slightly.
  3. Toast the almonds: Spread sliced almonds on a baking sheet and toast at 350°F (175°C) for 5–7 minutes until lightly golden. Let cool.
  4. Prepare the dry ingredients: In a mixing bowl, whisk together almond flour, all-purpose flour, sugar, and salt.
  5. Whisk the egg whites: In a separate bowl, lightly whisk the egg whites until foamy. Stir into the dry mixture.
  6. Add butter and flavoring: Mix in the browned butter and vanilla extract until smooth.
  7. Fold in almonds: Gently fold in most of the toasted almonds, reserving some for topping.
  8. Fill the molds: Spoon the batter into the molds, filling each about ⅔ full. Sprinkle reserved almonds on top.
  9. Bake: Bake for 12–15 minutes until edges are golden and a toothpick comes out with moist crumbs.
  10. Cool and serve: Let the cakes cool briefly in the pan, then transfer to a wire rack. Enjoy warm or at room temperature.
