  • Salt & pepper to taste

  • ⅓ cup crumbled feta cheese
  • ¼ cup diced red onion
  • 1 tbsp chopped parsley
  1. Serving:
  • Lemon wedges, for serving
  • Tzatziki sauce, for dipping

Instructions

  1. Preheat oven: Preheat oven to 425°F (220°C). Cut potatoes into fries and soak in cold water for 30 minutes.
  2. Toss with seasoning: Drain, dry, and toss potatoes with olive oil, oregano, salt, and pepper.
  3. Bake: Spread on baking sheet and bake for 30–35 minutes, flipping halfway through.
  4. Add toppings: Once crispy and golden, top the fries with feta, onion, and parsley.
  5. Serve: Serve hot with lemon wedges and tzatziki sauce.
