  • 1 large egg
  • 1 large egg yolk

For the Lemon Layer:

  • 1/4 cup fresh lemon juice
  • 1/2 cup honey
  • 4 tbsp unsalted butter
  • 1 tbsp cornstarch

For the Blueberry Layer:

  • 10 oz fresh blueberries
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp honey
  • 1 tbsp heavy cream

Instructions

  1. Prepare the Crust: Whisk together flour, sugar, and salt. Cut in butter until crumbs form. Add vanilla and cream. Press into a tart pan and chill.
  2. Bake the Crust: Preheat oven, bake crust until golden, then cool.
  3. Make the Lemon Layer: Whisk egg, yolk, lemon juice, honey, butter, and cornstarch. Cook until thickened, then pour over crust and chill.
  4. Prepare the Blueberry Layer: Cook blueberries, lemon juice, cornstarch, and honey until thick. Blend if desired, stir in cream.
  5. Assemble the Tart: Spread blueberry layer over lemon layer and chill until set.
  6. Serve: Slice and serve chilled, garnishing with lemon zest or berries.
