For the Smash Patties:

  • 1 lb (450g) ground beef (80/20 blend)
  • Salt & freshly cracked black pepper
  • 1 tablespoon unsalted butter
  • 4 brioche burger buns, lightly buttered and toasted

For the Bacon Mayo:

  • 1/2 cup (120g) mayonnaise
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1 tablespoon maple syrup (optional)
  • 1/3 cup (50g) crispy bacon bits, finely chopped

Instructions

  1. Make the Bacon Mayo: In a small bowl, mix together mayo, Dijon, paprika, garlic powder, and maple syrup (if using). Stir in crispy bacon bits. Chill until ready to use.
  2. Make the Smash Burgers: Divide ground beef into 4 equal balls (~1/4 lb each). Preheat a cast-iron skillet or griddle over high heat until smoking hot. Add a bit of butter to the pan. Place beef balls onto hot surface and immediately smash flat using a metal spatula (use parchment between spatula & meat if needed). Season with salt and pepper. Cook 2–3 minutes until deeply crusted, flip once, and cook another 1–2 minutes. Toast brioche buns on a pan or griddle until golden. Spread bacon mayo on both top and bottom buns. Place patty on bottom, add more bacon mayo or toppings (optional), and close with the top bun.

Notes

  • Press patties firmly and quickly to create a crispy seared crust.
  • Try adding cheese (American or cheddar) just after flipping.
  • Customize with caramelized onions, pickles, or extra bacon.
