A delightful Saskatoon Berry Clafoutis recipe, a custardy French-style baked dessert that marries the sweetness of juicy berries with a light, eggy batter, creating a rustic yet elegant treat perfect for any occasion.

Ingredients

Scale

For the Clafoutis:

  • 1 cup fresh or frozen Saskatoon berries (or substitute with blueberries)
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1 tbsp melted butter (plus extra for greasing)
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350°F (175°C) and generously butter a 9-inch ovenproof skillet or baking dish.
  2. Prepare batter: Whisk eggs and sugar until light and foamy. Add milk, vanilla, almond extract, and melted butter. Mix in sifted flour and salt until a smooth batter forms.
  3. Set base and add berries: Pour a thin layer of batter into the skillet and bake for 5 minutes. Remove from oven, scatter Saskatoon berries, then pour remaining batter over the top.
  4. Bake: Bake for 35–40 minutes until puffed and golden, and a knife inserted comes out clean.
  5. Finish and serve: Let cool slightly, dust with powdered sugar, slice, and serve.
