Pie Crust:

Filling:

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup honey
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • 2 tbsp cornmeal
  • 1 tbsp white vinegar
  • 1/2 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 3 large eggs
  • Flaky sea salt, for topping

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and place par-baked pie crust on a baking sheet.
  2. Mix Filling: In a large bowl, whisk together melted butter, honey, sugar, cream, cornmeal, vinegar, vanilla, and sea salt until smooth.
  3. Add Eggs: Whisk in the eggs until fully incorporated and the mixture is silky.
  4. Pour Filling: Pour the filling into the prepared crust.
  5. Bake: Bake for 35–40 minutes until the edges are set and the center is slightly jiggly but not liquid.
  6. Cool and Chill: Let the pie cool at room temperature, then chill in the refrigerator for at least 2 hours.
