  • ½ cup (120ml) vegetable oil (or melted butter)
  • 2 large eggs
  • 1 tsp vanilla extract

Dry Ingredients:

  • ¼ cup (50g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup (130g) chocolate chips (plus extra for topping)

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment.
  2. Mix Wet Ingredients: In a large bowl, combine mashed bananas, oil, eggs, vanilla, and both sugars. Whisk until smooth.
  3. Add Dry Ingredients: Sift in flour, cocoa powder, baking soda, and salt. Stir just until combined.
  4. Fold in Chocolate: Gently fold in chocolate chips.
  5. Bake: Pour batter into prepared pan. Sprinkle extra chocolate chips on top. Bake for 55–65 minutes or until a toothpick inserted comes out with moist crumbs.
  6. Cool: Let cool in pan for 10 mins, then transfer to a wire rack. Slice when completely cool.

Notes

  • Use Dutch-processed cocoa for a richer chocolate flavor.
  • Add a teaspoon of espresso powder for a deeper cocoa profile.
  • Keeps well in the fridge for up to 5 days or freeze slices for later.
