For the Filling:

  • 2 cups diced apples (peeled, small cubes)
  • 2 tbsp coconut sugar or brown sugar
  • 1 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

For the Crust:

  • 1 package store-bought or homemade pie crust
  • 1 tbsp plant-based milk or egg wash (for brushing)

Instructions

  1. In a small saucepan, combine diced apples, coconut sugar, maple syrup, cinnamon, nutmeg, and lemon juice over medium heat. Cook for 5–6 minutes, stirring occasionally, until apples soften slightly.
  2. Mix cornstarch and water in a small bowl, then stir into apple mixture. Cook 1–2 more minutes until thickened. Remove from heat and cool completely.
  3. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  4. Roll out pie dough and cut into small circles using a cookie cutter or glass (about 3 inches).
  5. Place half the rounds on the baking sheet. Spoon a tablespoon of apple filling onto each.
  6. Cut strips from remaining dough and lay them in a lattice pattern over the filling. Press edges down with a fork to seal.
  7. Brush tops with milk or egg wash for golden color.
  8. Bake for 18–22 minutes, or until the pies are golden brown and bubbly.
  9. Let cool before serving.
