For the Filling:
- 2 cups diced apples (peeled, small cubes)
- 2 tbsp coconut sugar or brown sugar
- 1 tbsp maple syrup
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp water
For the Crust:
- 1 package store-bought or homemade pie crust
- 1 tbsp plant-based milk or egg wash (for brushing)
- In a small saucepan, combine diced apples, coconut sugar, maple syrup, cinnamon, nutmeg, and lemon juice over medium heat. Cook for 5–6 minutes, stirring occasionally, until apples soften slightly.
- Mix cornstarch and water in a small bowl, then stir into apple mixture. Cook 1–2 more minutes until thickened. Remove from heat and cool completely.
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out pie dough and cut into small circles using a cookie cutter or glass (about 3 inches).
- Place half the rounds on the baking sheet. Spoon a tablespoon of apple filling onto each.
- Cut strips from remaining dough and lay them in a lattice pattern over the filling. Press edges down with a fork to seal.
- Brush tops with milk or egg wash for golden color.
- Bake for 18–22 minutes, or until the pies are golden brown and bubbly.
- Let cool before serving.
