For the Shortbread Crust:

  • 1 cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ tsp salt

For the Lemon Layer:

  • 1½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • ½ cup freshly squeezed lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
  2. Combine melted butter, sugar, flour, and salt. Press into pan and bake 18–20 mins.

  3. In another bowl, whisk sugar, flour, eggs, and lemon juice until smooth. Pour over warm crust.
  4. Bake another 20–25 minutes. Cool fully, then dust with powdered sugar and cut into squares.
