A classic French Onion Soup recipe that is rich, savory, and topped with gooey melted cheese. Perfect for a cozy night in!

Onions:

  • 4 large yellow onions, thinly sliced

Seasonings:

  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 cup dry white wine (optional)
  • 6 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1/4 tsp black pepper
  • 1 tsp thyme

For Serving:

  • Baguette slices, toasted
  • Gruyère or mozzarella cheese, grated

Instructions

  1. Caramelize Onions: In a large pot, heat butter and oil. Add onions, salt, and sugar. Cook low and slow for 30–40 mins until caramelized.
  2. Add Broth and Seasonings: Add wine to deglaze the pan (if using). Stir in broth, Worcestershire, pepper, and thyme. Simmer for 20 mins.
  3. Prepare for Serving: Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices and cheese.
  4. Broil: Broil for 2–3 mins until cheese is bubbly and golden. Serve hot.

Notes

  • For a richer flavor, you can add a splash of brandy when deglazing the pan.
  • Make sure to use oven-safe bowls for broiling the cheese topping.
