Onions:
- 4 large yellow onions, thinly sliced
Seasonings:
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 cup dry white wine (optional)
- 6 cups beef broth
- 1 tsp Worcestershire sauce
- 1/4 tsp black pepper
- 1 tsp thyme
For Serving:
- Baguette slices, toasted
- Gruyère or mozzarella cheese, grated
- Caramelize Onions: In a large pot, heat butter and oil. Add onions, salt, and sugar. Cook low and slow for 30–40 mins until caramelized.
- Add Broth and Seasonings: Add wine to deglaze the pan (if using). Stir in broth, Worcestershire, pepper, and thyme. Simmer for 20 mins.
- Prepare for Serving: Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices and cheese.
- Broil: Broil for 2–3 mins until cheese is bubbly and golden. Serve hot.
