A simple, wholesome breakfast casserole made with bread, eggs, milk, and loads of fresh berries—prepared the night before for a quick, nutritious, and flavorful start to your day.

Ingredients

Scale

Whole Grain Bread:

  • 8 cups whole grain bread, cubed

Mixed Berries:

  • 2 cups mixed berries (fresh or frozen)

Eggs and Milk Mixture:

  • 6 large eggs
  • 2 cups milk (dairy or plant-based)
  • 1/4 cup pure maple syrup (plus extra for serving)

Instructions

  1. Grease Baking Dish: Lightly grease a 9×13-inch baking dish. Spread bread cubes evenly in the dish, then sprinkle berries over the top.
  2. Prepare Egg Mixture: In a large bowl, whisk together eggs, milk, and maple syrup until well combined.
  3. Combine Ingredients: Pour egg mixture evenly over bread and berries, pressing gently to ensure bread soaks up liquid.
  4. Refrigerate Overnight: Cover with plastic wrap and refrigerate overnight (at least 6 hours).
  5. Preheat and Bake: Preheat oven to 350°F (175°C). Remove casserole from the refrigerator and let sit at room temperature for 20 minutes. Bake for 45–50 minutes, or until golden and set in the center.
  6. Serve: Serve warm, dusted with powdered sugar or drizzled with extra maple syrup if desired.
