For Choux Pastry:

  • 1 cup water
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 4 eggs

For Filling and Topping:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 cup raspberry purée
  • 1/2 cup chopped pistachios
  • White chocolate drizzle

Instructions

  1. Prepare Choux Pastry: Preheat oven to 375°F (190°C). In a saucepan, bring water and butter to a boil. Remove from heat and stir in flour until a smooth dough forms.
  2. Incorporate Eggs: Let cool slightly, then beat in eggs one at a time, mixing until fully incorporated.
  3. Pipe & Bake: Transfer the dough to a piping bag and pipe éclair shapes onto a parchment-lined baking sheet. Bake for 30 minutes until golden and puffed. Let cool.
  4. Make the Filling: Whip heavy cream, powdered sugar, and raspberry purée until light and fluffy.
  5. Fill & Decorate: Slice éclairs open and fill with the raspberry cream. Sprinkle with chopped pistachios and drizzle with melted white chocolate for a stunning finish.
  6. Serve & Enjoy: Let the éclairs chill for a few minutes before serving!
