  • 2 large eggs

  • Pinch of salt & pepper

Topping:

  • ½ cup crème fraîche (or sour cream)
  • 1 cup diced bacon, cooked until crisp
  • 1 cup scallions (green onions), sliced
  • ½ cup mozzarella or gruyere cheese, shredded
  • Freshly ground black pepper

Instructions

  1. Preheat the oven: Preheat to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Make the crust: In a bowl, whisk eggs, almond flour, baking powder, garlic powder, salt, and pepper. Stir in mozzarella until a dough-like mixture forms. Spread thinly into a rectangle on parchment paper.
