Cake:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp cinnamon
- ½ tsp salt
- ½ cup milk
- 1½ cups finely chopped peeled apples (e.g., Honeycrisp)
Glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
- Preheat oven: Preheat oven to 325°F (160°C) and grease/line a loaf pan.
- Cream butter and sugar: Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well.
- Add vanilla: Stir in vanilla extract.
- Prepare dry ingredients: In another bowl, whisk flour, baking powder, salt, and cinnamon.
- Combine wet and dry: Add dry ingredients to the wet mixture, alternating with milk.
- Add apples: Fold in chopped apples.
- Bake: Pour batter into the pan and bake for 60–70 minutes. Cool completely.
- Make glaze: Mix powdered sugar, milk, and vanilla extract. Pour over cooled cake.
