  • 12 tablespoons pure maple syrup (optional)

Instructions

  1. Prepare the Cake: Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and set aside.
  2. Make the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  3. Mix the Wet Ingredients: In a large mixing bowl, beat together the molasses, melted butter, sugar, milk, applesauce, vegetable oil, egg, and vanilla extract until smooth and well combined.
  4. Combine the Wet and Dry Ingredients: Gradually fold in the dry ingredients until fully combined. Do not overmix.
  5. Bake the Cake: Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  6. Make the Frosting: In a large mixing bowl, beat the cream cheese and butter together until light and fluffy. Gradually add the powdered sugar, cinnamon, vanilla extract, and maple syrup (if using). Beat until smooth and creamy.
  7. Assemble the Cake: Once the cakes are completely cool, frost the top of one cake layer with the cinnamon cream cheese frosting. Place the second cake layer on top and frost the top and sides of the cake.
