Dough:

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp active dry yeast
  • ¼ cup granulated sugar
  • ½ tsp salt
  • Zest of 2 lemons
  • 1 tbsp poppy seeds
  • 1 cup warm milk
  • ¼ cup unsalted butter, melted
  • 1 large egg

Glaze:

  • 1 cup powdered sugar
  • 2 tbsp lemon juice
  • ½ tsp vanilla extract

Instructions

  1. In a large bowl, combine 2 cups flour, yeast, sugar, salt, lemon zest, and poppy seeds. Stir in warm milk, butter, and egg. Mix until smooth.
  2. Add remaining flour gradually, kneading for 6–8 minutes until dough is smooth and elastic.
  3. Place in greased bowl, cover, and let rise 1 hour.
  4. Roll out dough into a rectangle, spread with softened butter and a sprinkle of sugar (optional), then roll up and slice.
  5. Arrange in a baking pan, cover and rise again 30 minutes.
  6. Bake at 350°F (175°C) for 20–25 minutes or until golden.
  7. Whisk glaze ingredients and drizzle over slightly cooled rolls.
