Fresh Lemon Poppyseed Rolls Recipe

Dough:
- 3 ½ cups all-purpose flour
- 2 ¼ tsp active dry yeast
- ¼ cup granulated sugar
- ½ tsp salt
- Zest of 2 lemons
- 1 tbsp poppy seeds
- 1 cup warm milk
- ¼ cup unsalted butter, melted
- 1 large egg
Glaze:
- 1 cup powdered sugar
- 2 tbsp lemon juice
- ½ tsp vanilla extract
- In a large bowl, combine 2 cups flour, yeast, sugar, salt, lemon zest, and poppy seeds. Stir in warm milk, butter, and egg. Mix until smooth.
- Add remaining flour gradually, kneading for 6–8 minutes until dough is smooth and elastic.
- Place in greased bowl, cover, and let rise 1 hour.
- Roll out dough into a rectangle, spread with softened butter and a sprinkle of sugar (optional), then roll up and slice.
- Arrange in a baking pan, cover and rise again 30 minutes.
- Bake at 350°F (175°C) for 20–25 minutes or until golden.
- Whisk glaze ingredients and drizzle over slightly cooled rolls.
