  • 1 egg yolk
  • 23 tbsp cold water

For the Crème Légère:

  • 1 1/2 cups whole milk
  • 1/2 vanilla bean or 1 tsp vanilla extract
  • 4 egg yolks
  • 1/3 cup granulated sugar
  • 3 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1/2 cup heavy cream (whipped to soft peaks)

For the Vanilla Whipped Peaks:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Make the Tart ShellCombine flour and powdered sugar. Cut in butter, add egg yolk and water, press into tart pan, chill, bake.
  2. Prepare the Crème LégèreHeat milk with vanilla. Whisk egg yolks, sugar, cornstarch, add milk, thicken, add butter, cool, fold in whipped cream.
  3. Assemble the TartSpread crème légère in tart shell, pipe whipped cream peaks.
  4. Chill & ServeRefrigerate tart for at least 2 hours. Garnish with berries, flowers, or citrus zest.
