For the Tart Shell:

- 2–3 tbsp cold water
For the Crème Légère:

- 1/3 cup granulated sugar
- 3 tbsp cornstarch
- 2 tbsp unsalted butter
- 1/2 cup heavy cream (whipped to soft peaks)
For the Vanilla Whipped Peaks:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Make the Tart ShellCombine flour and powdered sugar. Cut in butter, add egg yolk and water, press into tart pan, chill, bake.
- Prepare the Crème LégèreHeat milk with vanilla. Whisk egg yolks, sugar, cornstarch, add milk, thicken, add butter, cool, fold in whipped cream.
- Assemble the TartSpread crème légère in tart shell, pipe whipped cream peaks.
- Chill & ServeRefrigerate tart for at least 2 hours. Garnish with berries, flowers, or citrus zest.
