Shrimp:

  • 1 lb shrimp (peeled & deveined)

Smoked Sausage:

  • 12 oz smoked sausage (sliced into half-moons)

Rice Mixture:

  • 2 cups cooked rice (white or brown)
  • 1 small onion (diced)
  • 1 red bell pepper (diced)
  • 2 celery stalks (diced)
  • 2 cloves garlic (minced)
  • 1 cup frozen peas & carrots mix
  • 2 tbsp olive oil (or butter)
  • 1 tsp paprika
  • 1 tsp Cajun seasoning (or Creole seasoning)
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • ¼ tsp cayenne (optional for heat)

Garnish:

  • 2 green onions (sliced, for garnish)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook the Sausage: Heat 1 tbsp oil in a large skillet over medium heat. Brown sausage slices until slightly crispy. Remove and set aside.
  2. Sauté the Vegetables: In the same skillet, add another tbsp of oil. Cook onion, bell pepper, celery, and garlic until softened (about 5 minutes).
  3. Cook the Shrimp: Season shrimp with paprika, Cajun seasoning, and black pepper. Add to skillet and cook 2–3 minutes per side, until pink. Remove and set aside.
  4. Combine Rice and Sausage: Stir in the cooked rice, peas & carrots, and browned sausage. Mix well and cook for 3–4 minutes, letting flavors blend.
  5. Finish with Shrimp: Return shrimp to the skillet and toss everything together. Taste and adjust seasoning.
  6. Serve: Garnish with green onions and parsley. Enjoy hot as a hearty one-pan meal!
