These crunchy, golden tofu bites are marinated in dill pickle juice and tossed in a flavorful breading, then baked or air-fried to perfection. Perfect as a snack, appetizer, or plant-based protein for salads and wraps.

For the Marinade:

  • 1 (14 oz) block extra-firm tofu, pressed and torn into chunks
  • ¾ cup dill pickle juice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried dill
  • Salt & pepper to taste

For the Coating:

  • ¾ cup breadcrumbs (panko preferred)
  • 2 tbsp nutritional yeast
  • ½ tsp paprika
  • ¼ tsp cayenne (optional)
  • Extra dried dill for added flavor
  • For Serving:

  • Vegan ranch or dill dip
  • Fresh herbs (optional)

Instructions

  1. Prep Tofu: Press tofu to remove excess moisture, then tear into rustic bite-sized pieces.
  2. Marinate: Add tofu to a bowl with dill pickle juice, oil, garlic powder, onion powder, dill, salt, and pepper. Let sit for 20–30 minutes.
  3. Bread: In a separate bowl, mix breadcrumbs, nutritional yeast, paprika, and cayenne. Toss marinated tofu in breadcrumb mixture until well coated.
  4. Cook:
    • Air Fryer: Air fry at 375°F (190°C) for 14–16 minutes, shaking halfway.
    • Oven: Bake at 400°F (200°C) for 25–30 minutes, flipping halfway through.
  5. Serve: Serve hot with vegan ranch or dill dip.

Notes

  • Use panko for maximum crispiness.
  • Want it extra tangy? Add a spoonful of chopped pickles to the marinade.
  • Great as a salad topper or wrapped in a pita!
