  • 1 tsp vanilla extract
  • Blue food coloring (natural spirulina-based or gel), about ½ tsp or until desired shade

Additional:

  • 1 ripe banana, sliced
  • Maple syrup, for serving

Instructions

  1. Preheat your waffle iron and lightly grease it. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, beat egg with milk, melted butter, vanilla, and blue coloring until smooth.
  3. Combine wet ingredients into dry mixture; stir gently until just combined—batter may be slightly lumpy.
  4. Pour batter into the hot waffle iron (about ½ cup per waffle) and cook according to manufacturer’s instructions until crisp and set.
  5. Plate waffles with banana slices around the edge, drizzle with maple syrup, and serve warm.
