For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Sauce:

  • 2 tablespoons butter
  • 1/2 yellow onion, finely chopped
  • 8 oz (225g) mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/2 cup (50g) shredded mozzarella
  • 1/4 cup (25g) grated Parmesan cheese

For Garnish:

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, and paprika.
  2. In a large skillet over medium heat, heat olive oil and sear chicken on both sides until golden (about 3–4 minutes per side). Remove and set aside.
  3. In the same pan, melt butter. Add onions and mushrooms, sauté until soft and browned.
  4. Add garlic and cook for 1 minute. Stir in chicken broth, cream, onion powder, and simmer for 3 minutes.
  5. Return chicken to the skillet or transfer all to a baking dish. Spoon sauce and mushrooms over the top.
  6. Sprinkle mozzarella and Parmesan over each piece of chicken.
  7. Bake uncovered for 20–25 minutes, or until the chicken is fully cooked (internal temp 165°F/74°C).
  8. Garnish with fresh parsley and serve warm.

Notes

  • Serve over mashed potatoes, rice, or egg noodles to soak up the sauce.
  • Add a splash of white wine to the sauce for extra depth.
  • Use Gruyère or Swiss cheese for a more classic twist.
