For the Pasta:

  • 8 oz spaghetti or bucatini

For the Sauce:

  • 6 slices bacon, chopped
  • 1 tbsp butter
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Cook the Bacon: In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving about 1 tbsp of the fat in the pan.
  3. Sauté the Mushrooms: Add butter to the skillet. Once melted, sauté mushrooms for 5–6 minutes until browned.
  4. Make the Sauce: Stir in garlic, black pepper, and thyme. Cook for 1 minute. Pour in cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and smooth.
  5. Combine Everything: Add cooked pasta and reserved bacon to the sauce. Toss to coat, adding reserved pasta water as needed to loosen the sauce.
  6. Season and Serve: Taste and season with salt as needed. Serve hot, garnished with chopped parsley and extra Parmesan if desired.
