Coconut Lover’s Rice Krispy Treats Recipe

3 tbsp unsalted butter
- 1 bag (10 oz) mini marshmallows
- 1 tsp coconut extract (optional for extra flavor)
- 6 cups Rice Krispies cereal
- 1½ cups sweetened shredded coconut (divided)
- ½ cup toasted coconut (optional topping)
- In a large pot, melt the butter over medium heat. Add marshmallows and stir until completely melted and smooth.
- Stir in coconut extract and remove from heat. Quickly mix in Rice Krispies and 1 cup of shredded coconut until evenly combined.
- Press the mixture into a greased 9×13-inch pan with a spatula or wax paper. Sprinkle remaining ½ cup shredded coconut on top and press gently.
- Optionally, toast some extra coconut and sprinkle for added flavor and crunch.
- Let set for 1 hour. Slice and serve!
