Lobster Salad:

  • 1 lb cooked lobster meat (claw, tail, knuckle), chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon finely chopped celery
  • 1 tablespoon chopped chives
  • Salt and pepper to taste

For Serving:

  • 4 split-top brioche hot dog buns
  • 2 tablespoons unsalted butter, for toasting buns
  • Old Bay seasoning (optional garnish)
  • Lemon wedges, for serving

Instructions

  1. In a large mixing bowl, combine lobster meat, mayonnaise, lemon juice, Dijon mustard (if using), celery, chives, salt, and pepper. Gently fold to coat the lobster without breaking it apart. Chill the mixture in the refrigerator for 20 minutes for the flavors to meld.
  2. Heat a skillet over medium heat and melt butter. Lightly toast the sides of each bun until golden brown.
  3. Stuff each toasted bun generously with chilled lobster salad.
  4. Sprinkle a pinch of Old Bay seasoning if desired, and serve immediately with lemon wedges and Old Bay chips on the side.
