Brownie Layer:

  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt

Cheesecake Layer:

  • 8 oz (226g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Cherry Swirl:

  • 1/2 cup (120ml) cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper.
  2. In a mixing bowl, melt butter, then whisk in sugar, eggs, vanilla, and cocoa powder until smooth.
  3. Stir in flour and salt until fully combined. Set aside ¼ cup of the batter for swirling.
  4. Spread the remaining brownie batter into the prepared pan.
  5. In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spread over brownie batter.
  6. Drop spoonfuls of cherry pie filling over the cheesecake layer.
  7. Drop remaining brownie batter in dollops and use a knife to swirl everything together lightly.
  8. Bake for 35–40 minutes, until the center is set. Cool completely before slicing.
