Brownie Layer:
- 1/2 cup (115g) unsalted butter
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup (30g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 teaspoon salt
Cheesecake Layer:
- 8 oz (226g) cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
Cherry Swirl:
- 1/2 cup (120ml) cherry pie filling
- Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper.
- In a mixing bowl, melt butter, then whisk in sugar, eggs, vanilla, and cocoa powder until smooth.
- Stir in flour and salt until fully combined. Set aside ¼ cup of the batter for swirling.
- Spread the remaining brownie batter into the prepared pan.
- In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spread over brownie batter.
- Drop spoonfuls of cherry pie filling over the cheesecake layer.
- Drop remaining brownie batter in dollops and use a knife to swirl everything together lightly.
- Bake for 35–40 minutes, until the center is set. Cool completely before slicing.
