Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large mixing bowl, cream together butter, vegetable oil, and sugar until light and fluffy.
  4. Add Eggs and Flavorings: Beat in eggs one at a time, then mix in almond extract.
  5. Alternate Wet and Dry Ingredients: Gradually add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix in cherry juice, chopped cherries, and food coloring, if using.
  6. Bake: Divide the batter between the prepared pans and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
  7. Make Frosting: For the frosting, beat butter until creamy, then gradually add powdered sugar, cherry juice, vanilla, salt, and food coloring. Beat until smooth and creamy.
