For the Cake:
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1 1/2 cups granulated sugar
- 3 large eggs
- 2 teaspoons almond extract
- 1 cup buttermilk
- 1/2 cup maraschino cherry juice
- 1 cup finely chopped maraschino cherries
- A few drops of pink or red food coloring (optional)
For the Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar, sifted
- 2 tablespoons maraschino cherry juice
- 1 teaspoon vanilla extract
- Pinch of salt
- Pink or red food coloring (optional)
For Garnish:
- Whole maraschino cherries with stems
- Preheat and Prepare: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a large mixing bowl, cream together butter, vegetable oil, and sugar until light and fluffy.
- Add Eggs and Flavorings: Beat in eggs one at a time, then mix in almond extract.
- Alternate Wet and Dry Ingredients: Gradually add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix in cherry juice, chopped cherries, and food coloring, if using.
- Bake: Divide the batter between the prepared pans and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
- Make Frosting: For the frosting, beat butter until creamy, then gradually add powdered sugar, cherry juice, vanilla, salt, and food coloring. Beat until smooth and creamy.
- Assemble: Place one cake layer on a serving plate, frost the top, then add the second layer and frost the top and sides of the cake. Decorate with whole cherries.
- Serve: Slice and enjoy your Cherry Blossom Dream Cake!
Notes
- You can adjust the intensity of cherry flavor by adding more or less cherry juice to the batter.
- For a more pronounced pink color, increase the amount of food coloring in the cake and frosting.
- Ensure the cakes are completely cooled before frosting to prevent melting.
