For the French Toast:
- 4 thick slices brioche bread
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tbsp butter (for frying)
For the Cherry Sauce:
- 2 cups fresh or frozen cherries, pitted
- 1/3 cup water
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water
For Topping:
- Whipped cream
- Fresh cherries
- Optional: dusting of cocoa powder or cinnamon
- In a bowl, whisk eggs, milk, vanilla, and cinnamon. Dip brioche slices in the mixture until fully coated but not soggy.
- Heat a skillet over medium heat and melt butter. Cook brioche slices for 2–3 minutes per side until golden brown. Set aside.
- In a small saucepan, combine cherries, water, sugar, and lemon juice. Bring to a simmer.
- Once cherries begin to break down, add cornstarch slurry and stir until sauce thickens slightly. Remove from heat.
- To serve, place French toast on a plate, spoon warm cherry sauce over, top with whipped cream, a cherry, and optional cocoa powder.
- Serve immediately while warm.
