For the French Toast:

  • 4 thick slices brioche bread
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tbsp butter (for frying)

For the Cherry Sauce:

  • 2 cups fresh or frozen cherries, pitted
  • 1/3 cup water
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water

For Topping:

  • Whipped cream
  • Fresh cherries
  • Optional: dusting of cocoa powder or cinnamon

Instructions

  1. In a bowl, whisk eggs, milk, vanilla, and cinnamon. Dip brioche slices in the mixture until fully coated but not soggy.
  2. Heat a skillet over medium heat and melt butter. Cook brioche slices for 2–3 minutes per side until golden brown. Set aside.
  3. In a small saucepan, combine cherries, water, sugar, and lemon juice. Bring to a simmer.
  4. Once cherries begin to break down, add cornstarch slurry and stir until sauce thickens slightly. Remove from heat.
  5. To serve, place French toast on a plate, spoon warm cherry sauce over, top with whipped cream, a cherry, and optional cocoa powder.
  6. Serve immediately while warm.
