Main Cookie Dough:

  • 1½ cups almond flour
  • ½ cup coconut flour
  • ½ cup softened coconut oil or butter
  • ¼ cup maple syrup
  • 2 tbsp milk of choice
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 2 tbsp rainbow sprinkles
  • Pinch of salt

For the Coating:

  • 1 cup white chocolate chips
  • Pink gel food coloring
  • Extra rainbow sprinkles for topping

Instructions

  1. In a large bowl, mix almond flour, coconut flour, and salt. Add coconut oil, maple syrup, vanilla, almond extract, and milk. Stir until smooth.
  2. Fold in rainbow sprinkles. Roll into small square bites and freeze for 15 minutes.
  3. Melt white chocolate chips and tint with pink food coloring. Dip chilled bites into pink coating. Top with sprinkles.
  4. Let set in the fridge until firm.
