Ingredients

Scale

Chocolate Cookie Crust:

  • 2 cups crushed chocolate sandwich cookies (like Oreos, filling included)
  • 5 tbsp unsalted butter, melted

Baileys Cheesecake Filling:

  • 24 oz (680g) cream cheese, softened
  • 1 cup powdered sugar
  • ¾ cup Baileys Irish Cream
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (cold)

Topping:

  • ¾ cup heavy cream
  • 2 tbsp powdered sugar
  • ¼ cup chocolate ganache or syrup
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Make the Crust – Combine crushed cookies and melted butter until fully coated. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the freezer for 20 minutes.
  2. Prepare the Baileys Cheesecake Filling – Beat cream cheese until smooth and fluffy. Add powdered sugar, Baileys, and vanilla. Beat until creamy. In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into Baileys mixture until smooth and airy.
  3. Assemble and Chill – Spread filling over chilled crust. Smooth the top with a spatula. Cover and refrigerate for at least 6 hours or overnight for best results.
  4. Add Whipped Topping – Beat ¾ cup cream with 2 tbsp powdered sugar to stiff peaks. Pipe or spoon whipped cream on top of the cheesecake. Drizzle with chocolate ganache and dust with cocoa powder before serving.
