Rolls:

  • 1 cup 2% or higher fat milk, warmed to 110-115ºFahrenheit
  • 1 package Red Star Platinum Yeast (or any instant yeast)
  • 2 large eggs (room temperature)
  • 1/2 cup salted butter (melted)
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 44 1/2 cups all-purpose flour

Filling:

  • 1 cup apple butter
  • 3/4 cup light brown sugar (packed)
  • 1 tablespoon cinnamon

Cream Drizzle:

  • 1/2 cup heavy cream

Frosting:

  • 6 ounces cream cheese (room temperature)
  • 5 tablespoons butter (room temperature)
  • 2 cups powdered sugar
  • 1 teaspoon cinnamon

Instructions

  1. Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop. Add the eggs, butter, and sugar. Mix until combined.
  2. Add in salt and 4 cups of flour and mix until barely combined. Allow to rest for 5 minutes.
  3. Scrape the dough off the beater blade and attach the dough hook. Knead for 5-7 minutes.
  4. Spray a bowl with cooking spray, place the dough in, cover, and let rise until double.
  5. Roll out the dough, spread apple butter, brown sugar, and cinnamon. Roll up and cut into slices.
  6. Place in a baking pan, let rise, pour heavy cream over, and bake.
  7. Make frosting, spread over warm rolls, and store in an airtight container.

Notes

  • If you don’t have cream, use alternative options like half and half, coffee creamer, or evaporated milk.
  • For smaller rolls, cut into 15 slices and use a 10×15′ pan.
