These Blueberry Cream Cheese Bars feature a delightful contrast of a creamy filling with tart berries and a buttery oat crumble both on the bottom and top layers. A perfect balance of sweet and tangy flavors in every bite!

For the Crust and Crumble:

  • 3/4 cup softened butter
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/3 cups all-purpose flour
  • 1 1/3 cups quick oats (uncooked)

For the Cream Cheese Filling:

  • 8 ounces cream cheese
  • 1 14-ounce can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 egg yolk

For the Topping:

  • 1 cup blueberries (or raspberries)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper or coat with cooking spray.
  2. Prepare the Crust: In a large bowl, cream together the butter, sugar, and brown sugar. Mix in the baking soda, salt, flour, and oats until well combined. Press half of this mixture into the prepared pan and bake for 13 minutes.
  3. Make the Filling: While the crust bakes, in another bowl, beat the cream cheese until smooth. Gradually add the sweetened condensed milk, followed by the vanilla and egg yolk.
  4. Assemble the Bars: Once the crust is baked, pour the cream cheese mixture over it and spread evenly. Top with blueberries and the remaining oatmeal crumble. Press lightly.
  5. Bake: Bake for 20-25 minutes or until the edges turn golden brown.
  6. Cool and Serve: Allow the bars to cool completely before cutting into squares. Store in the refrigerator.
